Black Eyed Pea Chicken Chilli

 

What you need:

  • 2 pounds boneless skinless, chicken

  • 1 large onion

  • 3 cloves garlic

  • 1 tsp coriander

  • 2 tsps cumin

  • 4 cups chicken bone broth

  • 1 small can fire roasted chillies

  • 2 cans black eyed peas, drained

  • 2 cups frozen spinach

  • 2 tsps salt

  • 1 tsps pepper

  • 2 tbsps ghee butter

  • 2 tsps lime juice

  • Avocado + almond yogurt (for garnish)

 
 

delicious simple meal

Method:

  1. Cook the chicken for 5 mins in a large stockpot

  2. Add onion+ garlic for 4mins.

  3. Stir in spices, salt, pepper, chillies, peas, broth + spinach

  4. Bring chilli to simmer and cook for 15-20 mins

  5. Right before serving add ghee butter + lime juice

  6. Spoon out the dish + garnish with avocado + almond yogurt.

    PS. I added the almond yoghurt as I prefer that but the original recipe uses sour cream and a lime wedge as garnish too! I am also very much into my broth and slow cooking right now so I used broth instead of the stock from original recipe. Shout out to Kudos Kitchen!
